- 1 cup of raw brown rice
- 2 grated carrots (or shredded/spiralised)
- 8 finely sliced radishes
- 1 and a half cucumbers, finely sliced
- 4 nori sheet(s) ripped into small portions
- 200 g hot smoked salmon or trout
- 1 avocado
- 2 shallots, finely chopped
- 1/4 cup fried shallots (available in the asian aisle of the supermarket)
- 4 tsp pickled ginger
- salt & pepper to taste
METHOD
Cook the brown rice in a rice cooker or according to packet instructions
Assemble the carrot, cucumber, radishes, avocado, shallots, pickled ginger and hot smoked salmon in a bowl
Sprinkle on top the nori sheets, torn
Season with salt and pepper
Serve!
When you try it the next time, try a different fish! (because you WILL want to!)
