Poke bowl with hot smoked salmon

This simple, super-healthy recipe for a poke bowl is something that will keep you coming back time and time again.  The key ingredient that make this meal luxurious and a little bit special is the smoked fish of your choice, which we recommend you choose from this range of hot smoked salmon and trout from Pure Foods Tasmania
INGREDIENTS
  • 1 cup of raw brown rice 
  • 2 grated carrots (or shredded/spiralised)
  • 8 finely sliced radishes
  • 1 and a half cucumbers, finely sliced
  • 4 nori sheet(s) ripped into small portions
  • 200 g hot smoked salmon or trout
  • 1 avocado
  • 2 shallots, finely chopped
  • 1/4 cup fried shallots (available in the asian aisle of the supermarket)
  • 4 tsp pickled ginger
  • salt & pepper to taste

METHOD

Cook the brown rice in a rice cooker or according to packet instructions

Assemble the carrot, cucumber, radishes, avocado, shallots, pickled ginger and hot smoked salmon in a bowl

Sprinkle on top the nori sheets, torn 

Season with salt and pepper

Serve!
